Corn & Mango Salad

The champagne toasts to ring in the New Year have not started but I've already started my New Year's Resolutions. This year I am determined to master slowing down, stopping to smell the roses, and most importantly getting off that express train of life to do the things I really WANT to do. The express train represents the obligations, the expectations, the commitments that I don't really want to do, but endlessly force upon myself. There are so many of these that come upon all of us in our roles as friends, marriage partners, children, and parents that its easy to forget the commitment we should all make to ourselves. To take care of our own needs, our own happiness. Finding the right balance between our external worlds and our internal worlds has been hard for me. Its been 4 years of marriage, and I'm still figuring out the formula, and once we add kids to the picture, I'm pretty sure I will need to recalculate it.

I decided to make a list of the things that are important to me, and my New Years Resolution has been to priortize these things. I ran into a motivational speaker while on vacation with my husband in Phoenix, Arizona who told me something that seems so obvious yet it struck me at that moment. I was telling him about my express train life, and I was complaining that I couldn't seem to slow down. He said in return, "You have control over your life." It made me stop and remember that if I was unhappy about anything in life, it was in my control to change it. He didn't teach me anything new that day, only to trigger my own sense of responsibility to myself, and chide me for making excuses.

This post is in tribute to one of my New Years Resolution, to spend more time with my friends! My friends, some of whom I have relationships with for over 15 years, some even longer, and some who are new. To spend time with my family who live far away from me. To make time to go visit them regularly, and just hang out. Life has taken me to new places where I've made new friends and I have a new job. The train ride that contines is certainly thrilling, but its good to be home at last.

My dear friend Lavanya made this Mango and Corn Salad yesterday, and we pestered her to make it again today because it was that good. Holiday food can be healthy, and delicious! Lavanya has one of the best vegetarian cookbook collections I've seen, but its her added touch of tempered mustard seeds that take this dish over the top!

Corn & Mango Salad

1 ripe mango small cubes
1 can of sweet kernel corn, rinsed and drained
1/4 red onion, diced
1/4 green pepper, diced
1/4 red pepper, diced
1/4 cup ripe pomegranate seeds
3 leaves basil, chiffonaded
2 tbsp chopped cilantro for garnish
1 tsp black mustard seeds
1 tsp cumin powder
1 tsp red chili powder
1 tbsp olive oil
salt and pepper to taste

1. Temper the mustard seeds, cumin and red chili powder in the olive oil.
2. Add the onions, and sautee for a few minutes until they are soft.
3. Add the onion mixture to the remaining ingredients and mix well.
4. Season with salt and pepper, and garnish with the chopped cilantro.

It's my turn to take treats for staff in January and this would be the perfect item, especially with plenty of nice mangoes and pomegranates in the market and everyone on a health break.
